30 Minute Recipe Adventures
I work part time as a marketing writer (for which I'm paid) and part time as my children's chauffeur (for which I'm not). I'm not a great cook - or even an aspiring one. The Cook's Illustrated 30 Minute Meal at least lets me feel like I can get something decent on the table now and then. Every week I try a new recipe. Find out how they are!

Skillet Macaroni and Cheese - page 145
This recipe is pretty pointless. It was very cheesy and the kids didn't like it. (If you are cooking for kids, you might as well do Annie's anyway....) If I was cooking for adults, the Home Chef macaroni and cheese is amazing and worth a little extra time.

Easy Vegetarian Bean Chili - page 85
I thought it was great but husband and friend said "where's the meat?" so probably will stick with the meat on one page 84. But really nice taste and done in about 20 minutes. Not sure you even need the corn and cilantro at the end. Not so much chipotle if you want kids to eat it, though.

Creamy Skillet Penne with Mushrooms and Asparagus - page 143
Good. Husband gives it B+.
Just a little longer than 1/2 hour but put the asparagus in a little earlier than they ask.

Pasta with Chicken, Spinach and Cherry Tomatos in Creamy Feta Sauce - page 252
Made it in less than 1/2 hour. It was pretty good, but not something I'd rush out to make again. Not so great for leftovers because the spinach got too mushy.
Sun Dried Tomato and Basil Viaigrette - page 22
Okay if you like sun dried tomatoes. Which I don't, really. I suppose it would be good with some kind of antipasta but not really my thing.
Quick White Chicken Chili - page 79
Really good!
Daughter loved it too.
Pretty close to half an hour to complete.
This one is definitely a keeper.
Don't know how the leftovers were because there weren't any!

Miso-Ginger Viaigrette page 22
Not something I'd want every day but really good on some plain greens alongside sushi.
